Allagash: Founded in 1995, Allagash brew a unique variety of traditional and experimental Belgian-style beers. All of the beers at Allagash are bottle conditioned. This means that just prior to bottling a fresh dose of yeast is added, along with a measured amount of candy sugar. After bottling, the beers are moved to a temperature-controlled cellar, where the yeast will actually begin a new fermentation the bottle. This new fermentation naturally carbonates the beer, and greatly enhance the traditional Belgian character. The shape of this glass, being slightly narrower at the top, is designed to concentrate the bubbles or carbonation to the top allowing for the thirst quenching taste.
